Ingredients:
- 2 teaspoon cooking oil
- 1 medium sized onion, chopped
- 1 teaspoon garlic, minced
- 1 cup chicken meat, shredded
- 1/2 cup shrimp, devained (optional)
- 2 cups ubod (palm heart), julienned
- 1 teaspoon black pepper, ground
- 2 teaspoons salt (or patis/fish seasoning)
- balat ng lumpia (spring roll/egg roll wrappers)
- lettuce leaves
- 1 cup brown sugar
- 3 teaspoons soy sauce
- 2 1/2 cups water
- 1 teaspoon salt
- 3 tablespoons cornstarch (dissolved in 1/2 cup water)
- 3 tablespoons crushed peanuts (or crunchy peanut butter)
- black pepper, ground (to taste)
- Pour the cooking oil in a medium heat pan.
- Saute the garlic and onion.
- Add the shredded chicken and stir until golden brown.
- Season with salt (or patis/fish seasoning)
- Add shrimp and saute for 2 minutes.
- Add the ubod and stir occassionally until it is tender.
- Set aside to cool down before wrapping it.
- In a pot, mix the sugar, soy sauce, water, salt, crushed peanut (crunchy peanut butter) and bring to a boil.
- Add the cornstarch mixture.
- Stir constantly until it thickens.
- Season with ground black pepper to taste.
